Gluten Free King Cake Recipe – Baton Rouge Family Fun

I pride myself on being a solid scratch baker: Alton Brown practically raised me, for Pete’s sake, not to mention I audited an online Food Science class from Harvard one semester (hair flip). Harvard, people! So when I was tasked with developing a recipe for gluten-free king cake, I wasn’t intimidated. How hard could it be, I know how to bake!

As it would turn out, I do NOT know how to bake without gluten.

Gluten-Free King Cake

Test after test came out dry, crumbly. Disappointing. Just when I had decided I never wanted to see Bob’s Red Mill 1-To-1 baking flour again, I realized: I was going about it all wrong. I was trying to force my favorite king cake recipes to be gluten-free, rather than find a great gluten-free recipe that I could then make my own. Off to the internet I went.

I quickly became overwhelmed by expensive, unfamiliar ingredients. Whey protein isolate? Tapioca starch? Potato flour? If I were looking to get into the gluten-free baking market professionally, investing in these might have made sense. But all I really wanted was to occasionally be able to make a good king cake for my friends.

After some thought, it finally dawned on me: what was simple, comparably inexpensive, and easily accessible? Bread mix! After all, what is king cake, after you strip it of all the flavors, fillings, and toppings? Just mildly sweet, soft, bread.

I used Hodgson Mill gluten-free white bread mix because it was convenient to pick up at my local supermarket, but this recipe is straight-forward enough to work with whatever your favorite may be. For best results, it should be the kind that stays loose, like the consistency of a thick cake batter. I hope you enjoy creating your own homemade gluten-free king cake and would love to hear about the results!

Gluten-Free King Cake

Ingredients

Cake:

  • 3 ½ cups Gluten Free Bread Mix of your choice
  • ½ cup butter, divided (one stick)
  • 2 tablespoons cinnamon
  • ¾ cup white sugar, divided
  • ¼ cup light brown sugar
  • ½ teaspoon vanilla
  • 1 ½ cups milk
  • 1 ½ teaspoons fast rise yeast (included in most mixes, check yours to confirm)
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • 1 teaspoon cider vinegar
  • 1 teaspoon orange zest
  • ½ teaspoon lemon zest

Glaze:

  • 1 cups powdered sugar, sifted
  • 1 tablespoon milk
  • 1 tablespoon light corn syrup
  • 1 teaspoon almond flavoring (optional)

Sugar Topping:

  • 1 ½ cups white sugar
  • Purple, Green, and Yellow food coloring
  • 3 sandwich size plastic storage bags

Directions:

Cake:

1. Prepare a standard size bundt pan by spraying with thoroughly cooking spray and lightly coating with either cornmeal or GF baking flour. Tap out excess.

2. Melt ¼ cup butter (half stick) in a medium sized bowl; add ½ cup white sugar, ½ cup brown sugar, and ½ teaspoon vanilla. Stir to combine, set aside.

3. Warm milk in a small bowl to approximately 100*-110*. It will be warm to the touch but not scalding.

4. Add 1 teaspoon of the remaining sugar and all of the yeast to the milk. Stir, set a timer for 5 minutes and set aside.

5. Pour the bread mix into a mixing bowl of a stand mixer* equipped with the paddle attachment. Add remaining sugar and ½ teaspoon of salt and mix on low briefly, just to combine.

6. Melt the remaining ¼ cup butter.

7. When your 5-minute timer goes off, add milk and yeast mixture to bread mix along with melted butter, room temperature eggs, cider vinegar, and orange and lemon zests.

8. Mix on low until mostly combined, stop the mixer and scrape the bowl well with a spatula. Mix again for on medium-high for 3 minutes. The dough will be similar to a very thick cake batter.

9. Spoon approximately 1/3 of the dough into prepared bundt pan. Sprinkle with half of the cinnamon sugar mixture. Top with another 1/3 of the dough, sprinkle with the remaining cinnamon sugar. Finish with the last 1/3 of dough, smoothing the top with a wet spatula. Spray lightly with cooking spray, cover loosely in cling wrap. Allow to rise in a warm spot for 30 minutes.

10. Preheat oven to 375* near the end of rising time.

11. Bake at 375* for 45-55 minutes, or until a toothpick comes out clean when tested.

12. Turn out onto a cooling rack after 5 minutes, allow to cool completely.

Sugar Topping:

While cake is cooling, divide sugar into 3 sandwich bags. Add the purple, green, and yellow food coloring to the bags, then seal and shake. Add more food coloring, a few drops at a time, until desired color intensity is reached.

Glaze:

Combine powdered sugar, milk, corn syrup, and almond flavoring (if desired). Stir until smooth. Drizzle over cooled king cake then top with colored sugars immediately.

*A hand-held mixer can work also, but add 2 minutes to mix time. Mixing by hand is possible but tough on the arms! Stir for 8 full minutes if by hand.

Young People’s Opera Program – Opéra Louisiane

Inspire musical exploration and creativity with the Young People’s Opera Program hosted by Opéra Louisiane, virtually! 

In February and March of 2021, Opéra Louisiane is offering a hybrid educational program to best serve students and teachers during the pandemic, YPOP – Young People’s Opera Program. The hybrid program includes 10 interactive virtual sessions, all available to fourth, fifth, and sixth graders in the elementary schools of the Greater Baton Rouge Area. The sessions are designed in a way to familiarize students not only with music but with all other art forms that create an opera. In these interactive ZOOM sessions, students learn about acting, movement, dancing, designing sets and costumes, singing, musical notation, and most importantly, they learn to communicate their story to the audience through musical tools. Teachers can sign up for a minimum of 3 sessions, or as many as 10! All of the sessions are offered in February and March of 2021, and you can sign up for them at your convenience.

Meet the Young People’s Opera Program Teaching Artists!

What is Opera?

Young People's Opera ProgramDr. Sinella Aghasi is an arts administrator, educator, and violinist. She holds a Doctor of Musical Arts degree from Louisiana State University, Master of Music from San Francisco State University, and Bachelor of music education and violin performance from California State University Stanislaus.

As an arts advocate, Dr. Aghasi is committed to making Classical music relevant and accessible and bringing it to a diverse community. In her role as Associate Director of Opéra Louisiane, she is proud to take part in bringing professional opera to Baton Rouge and opening a door for thousands of students to experience an opera for the first time in their lives.

As an active performer, Dr. Aghasi plays with several local orchestras, such as Opéra Louisiane, Baton Rouge Symphony, Acadiana Symphony, Rapides Symphony, Lake Charles Symphony, and Gulf Coast Symphony. In addition to her love for performance, Dr. Aghasi’s passion for music education has never stopped growing. She served as a teaching artist at San Francisco Symphony’s Education Department, Modesto Symphony Youth Orchestra, and Kids’ Orchestra.

Opera is Lighting Design!

Young People's Opera ProgramBrian Schneider is a lighting designer and licensed electrician based in Lafayette, Louisiana.
A New York City native, he has worked extensively in lighting for Theater, Dance, TV, and as Lighting and AV Manager for the Rubin Museum of Art. Upon moving to Lafayette, Louisiana in 2011, he became the Technical Director for the Acadiana Center for the Arts, assisting them through their first four seasons.

In 2015, Brian began his own design firm, Footcandle Lighting & Electric. He lights performances, as well as commercial and residential projects. More recently Brian has been designing custom lamps and nightlights.

In 2019 he had an exhibition of constellation inspired lamps titled And The Stars Aligned.
He loves the people of South Louisiana. Working with groups such as Opéra Louisiane, Basin Dance Collective, Acting Up in Acadiana, Milena Theater Group and Zachary Richard he has the opportunity to integrate Louisiana’s culture and point of view, with his personal style.

Opera is Acting!

Young People's Opera ProgramGregory G. Williams Jr. is a native of Baton Rouge and the Founding Artistic Director for New Venture Theatre. He is a graduate of Northwestern State University with a BA in Theatre and New York Institute of Technology (NYIT) with an MBA in Marketing. His professional theatre background includes working with Don Holder (Tony Award Winning Lighting Designer for Disney’s The Lion King,) The Negro Ensemble Theatre Company (NYC), The Little Black Box Theatre Company (New Jersey), and American Family Theatre (Philadelphia.) He is also a playwright and has written over ten plays including, Colored, Step Off!, Sweet Georgia Brown, and is currently working on his next piece – Talbert Beacon Presents His Latest’s Greatest Gospel Stage Play.

After speaking with one of his mentors, Charles Weldon, at the Negro Ensemble Theatre Company, he returned to Louisiana to cultivate more support for the arts through a refreshing new theatre company that focused on innovation and diversity- hence New Venture Theatre was created. Professionally, Greg has been the Instructor of Theatre Arts for Our Lady of Mercy Catholic School, is a theatre consultant helping to launch diversity based theatre companies all over the country, and has developed and collaborated with over twenty programs to help bring the arts to underserved areas of our community. In June 2011, the Louisiana Senate recognized Greg for his contributions to the African American Community’s arts.

Opera is Design!

Young People's Opera ProgramWendy Waszut-Barrett, PhD, is an author, artist, scene designer and historian, specializing in painted settings for opera houses, vaudeville theaters, social halls, cinemas, and other entertainment venues. In addition to evaluating, restoring, and replicating historic backdrops, Waszut-Barrett also writes about forgotten scenic art techniques and theatre manufacturers. Her most recent publication is The Santa Fe Scottish Rite Temple: Freemasonry, Architecture and Theatre (Museum of New Mexico Press, 2018). Although her primary focus remains on the past, she continues to work as a contemporary scene designer for theatre and opera. Dr. Waszut-Barrett’s set designs are artful,

incorporating varied painting techniques as well as modern construction advancements. In addition to her scenic design experience, Waszut-Barrett also worked in large scale, designing props such as an 80 foot tall beanstalk displayed in Times Square for Atomic Props in 2003.

Young People's Opera ProgramKeturah Heard is a recent graduate of Louisiana State University with a Master of Music in vocal performance. Last season she performed the role of stepsister Clorinda in Opera Louisiane’s production of Rossini’s Cinderella and was also seen performing the role of Mariola in LSU’s collegiate premiere of Jake Heggie’s Two Remain. Recently, Keturah sang in Opera Louisiane’s Shifting Gears concert, safely bringing music to the public during the current pandemic. Along with performing, Keturah has enjoyed over ten years of teaching music to students of all ages and is thrilled to be a teaching artist with Opéra Louisiane this spring.

Young People's Opera ProgramOriginally from Lake Charles, Louisiana, Jennifer White received her classical ballet training from Sarah Quinn Jones at Dance Theatre Southwest. While in high school, Mrs. White attended North Carolina School of the Arts and graduated from the New Orleans Center for Creative Arts with a concentration in Dance and was awarded the Presidential Scholar and Regent Scholar Awards. She also trained and performed with Delta Festival Ballet in New Orleans. Her repertoire includes Petrushka, Cinderella, The Nutcracker, Taunhauser, Evangeline, Paquita, La Bayadere, La Corsaire, Swan Lake, Hansel and Gretel, The Magic Flute, The Barber of Seville, Bastien and Bastienne, and Amahl. In

2003, Mrs. White co-directed the Inner City Nutcracker for Mid City Dance Project and continues to work with children with special needs. She is also director of the Dance Center and School of Performing Arts Company and Junior Company. Most recently, Mrs. White co-directed, along with Dugg McDonough of LSU Opera, Seven Deadly Sins, and was also the choreographer for Trouble in Tahiti and The Cunning Little Vixen, with LSU Opera – of which has been awarded national awards and recognition. Mrs. White’s vision for her school is to achieve excellence through quality instruction in all the arts for students wishing to pursue a professional career as well as a wonderful education for those who prefer to learn about their art form for their own personal enjoyment. Additionally, Mrs. White is a fitness instructor in Power Yoga, Kickboxing, and Body Pump and teaches at several Baton Rouge area gyms. Mrs. White is a graduate of Louisiana State University with a degree in Graphic Design and has her own design business, i see designs, llc. She is also a partner in her family’s property investment company, White Oak Property Investments, LLC. Mrs. White is also blessed with a wonderful husband and two beautiful children.

Young People's Opera ProgramNae Rim Moon earned a Masters of Music in Choral Conducting at Northern Arizona University in 2018 where she assisted Women’s Chorale and Shrine of the Ages. Before moving to the United States, she is a graduate of Myongji University in Korea, where she studied Vocal Performance major, and she was a member of a professional choir which is JW Chorale as an alto. She is also a graduate of the University of Wisconsin in River Falls, where she studied Vocal Performance and Choral Conducting for her 2nd bachelor’s degree. She is a second-year DMA student in Choral Conducting at Louisiana State University and assisted A Cappella Choir and Chorale. Also, she is studying the Louisiana K-12 Music Certification program at LSU.

Opera is Storytelling!

Young People's Opera ProgramDanielle Laird is a Baton Rouge native, and graduated with a BME in Music Education from Florida State University. She taught high school choir for six years at 5A high schools in Cypress-Fairbanks ISD in Houston, TX. Danielle has sung professionally as part of Houston Chamber Choir, Cantare Houston, and as a cantor. She has taught in a variety of music education environments including high school choir, middle school choir, children’s choir, elementary general music, and private voice instruction. Danielle is currently pursuing her Masters degree at LSU in Music Education with a secondary concentration in Choral Conducting.

Meet an Opera Singer!

Young People's Opera ProgramKhary Wilson, tenor, is from Baton Rouge, Louisiana. He received his Bachelor of Arts degree from the University of South Carolina and his Master of Music from Louisiana State University. Mr. Wilson has performed opera, oratorio, and recital with regional companies across the US, Australia, and Europe. Recent performances include Tenor Soloist in Carmina Burana with the Maroondah Symphony in Melbourne, Australia; ‘Tybalt’ in Romeo and Juliet and ‘Action’ in West Side Story with GLOW Lyric Theater; ‘DonRamiro’ in La Cenerentola with The Atlanta Opera Studio, ‘Rinuccio’ in Gianni Schicchi with The Berlin Opera Academy; and Tenor Soloist in Carmina Burana with The Long Bay

Symphony. He was also a 2017 Tyler Young Artist with Opera on the James. Mr. Wilson has served on the voice faculty of Georgia College and State University, LaGrange College, and Mississippi State University. He is currently pursuing his Doctor of Musical Arts in Performance at LSU.

What is opera to you?

Young People's Opera ProgramDr. Leanne Clement is a graduate of The School of Music at Louisiana State University, where she received her Doctor of Musical Arts and Master of Music degrees in vocal performance. While at LSU she was awarded the School of Music Foundation Scholarship, the Mrs. Dorothy Halphen Kolb Scholarship from the Baton Rouge Opera Guild, and was a member of Pi Kappa Lambda, the music honor society. She also was co- founder of the LOOP or LSU Opera Outreach Program that provided performances to local elementary schools. Prior to moving to Louisiana, Leanne received her Bachelor of Arts in English from the College of William and Mary in Virginia.

As a mezzo-soprano, Leanne performs the dramatic character roles of Verdi and Wagner. During her tenure at Opéra Louisiane, Leanne has performed the roles of Erda in Michael Borowitz’s reduction of Wagner’s Ring Cycle, Martha in Faust and as a soloist in the 10th Anniversary Gala. She has also directed performances of L’elisir d’amore, Falstaff, and The Ring.

Leanne began work with Opéra Louisiane in the fall of 2008, was promoted to Director of Development in 2009, and hired as General Director in 2011, where she remains today. During her time with Opéra Louisiane, the company has quadrupled in size and has remained debt-free. Leanne is thrilled to work with an incredible staff and board of directors promoting opera in South Louisiana!

Introducing Baton Rouge Virtual Playdates – Join us for some virtual fun!

As you already know, events are being canceled, businesses are temporarily closing and kids are out of school for the next month. We know that school closings will cause lot of disruption and worry for some families. Baton Rouge Moms (soon to be Baton Rouge Family Fun) hopes to make the transition a little easier and a little more fun! Beginning this week, we will be partnering with local businesses and organizations to help you over the upcoming weeks – in the form of Baton Rouge Virtual Playdates!!

We’re lining up some of your favorite small businesses, organizations and groups to lead us through daily 15-30 minute activities via video.

Operation Imagination: NEW Indoor Play Area in Baton Rouge

Something NEW and EXCITING has opened up for families in Baton Rouge! If you’ve been wishing for another indoor play option for your littles, you’ll want to visit Operation Imagination, an intimate 2,000 square foot imaginative indoor play area where children can explore, learn and have fun through pretend-play! We’ve partnered with Operation Imagination to host a giveaway, be sure to enter below!! 

Operation Imagination

Operation Imagination is a unique and imaginative play experience designed for young children. The play stations have been well planned with great attention to detail to stimulate children’s minds through exploration and pretend play. Unlike other local facilities, Operation Imagination doesn’t just focus on active play but use pretend-play to engage the mind. The elements/activities are structured for preschool-age children to learn gross motor skills and build confidence as they interact in this “town within a town” with settings such as a grocery store, a theater, a camping area, home, education station, a mail stop, construction area, streets, an airplane to fly and more!

Operation Imagination

 

Pretend play is the acting out of stories that involve multiple perspectives and the playful manipulation of ideas and emotions; an important part of thinking and brain development. Our focus is for those 6 months to 7 years old looking for a play space to put their imagination to the test.

There are endless options for pretend play inside of the magical walls of Operation Imagination. If you’re searching for a new birthday venue for your little one, you can book parties too! Brew at the Zoo – Food Tasting, Beer Tasting, Live Music & More

Friends of the Baton Rouge Zoo is hosting its sixth annual Brew at the Zoo on Friday, October 4 and it promises to be the best one yet! As summer temperatures wane and the leaves begin to change colors, guests (21 and older only) are invited to the Zoo for an evening of food tasting, beer tasting, live music and more. Sample dozens of craft beers and munch on pub favorites, or show off your “safari chic” style while listening to the sound of live music.

Baton Rouge families, the Louisiana Children’s Museum opens to the public August 31st and you should start planning your day trip now! We recently had the opportunity to attend a media preview of the LCM, it wasn’t yet complete, yet we felt like we were walking through the most magical of places. It’s going to be something special for Louisiana families, a tactile experience that will delight young and old alike. Every section of the LCM is created to stimulate imagination, creativity and critical thinking in children and families through many inventive and engaging experiences, most importantly PLAY! Every decision made throughout the museum was intricately thought out to help elevate the capacity of our little ones. 

Julia Bland, CEO of Louisiana Children’s Museum, spoke beautifully on the importance of childhood, she encouraged us to enjoy and celebrate children where they are and to not make the mistake of wishing away seasons of childhood. The museum has been structured to support parents in their efforts to embrace each stage of development while focusing on literacy, environmental education, health and wellness, STEM, arts, and our rich Louisiana culture. 

Why the relocation? The new location allows the museum to better meet the needs of the community as well as improve geographic access and connect children to nature. The attention to detail outside is just as significant as the inside. The Louisiana Children’s Museum will include five new exhibit galleries indoors as well as a literacy center, a parent/teacher resource center, an edible garden, a sensory garden, and full-service café. Talk and Play Center

The Talk and Play center is a family-centered space that encourages families to make joyous connections  – connections of children to parents, to grandparents, to life long learning, to growing cycles – the continuums, connections, circles, and cycles that we see in so many parts of our lives.

Play With Me Exhibit

Created for children under the age of four, this ground-floor gallery is designed to provide easy access for parents of young children with strollers. Little ones can explore and play while resources are available to support parents in their journey as children’s first teachers. The Play With Me exhibit includes a fun one of a kind Sensory Lagoon, much like a tiny Lilly Pad water bed for children play on and experience. Play With Me also includes a Cypress Tree Book Nook, Peek-a-Boo Puppet Theater, Early Literacy Sensory Wall and a Discovery Zone.

Follow That Food 

Follow That Food will be one of the largest galleries. It will take children on a playful Louisiana Growing & Gathering food journey that starts in the fields and coastal waters, passes through the busy Ports & Cargo with stops at the Food & You Market, Creole Kitchen, café and finally, makes its way to the family table.

Dig into Nature

Overlooking the lagoon on the ground floor, this gallery is where children will discover the abundance of natural resources unique to Louisiana and the Gulf Coast Region. Through this tactile and textural set of experiences, visitors will explore the relationships between the diverse resources, ecosystems, plants and animals who live here. The “caring” and “sharing” stations will allow children to bring their own outdoor treasures to examine under massive microscopes and projector. The exhibit also includes Exploration & Innovation, Sedimentation Table, Storytelling Nest, Cajun Pirogue and an amazing Promise Tree Portal.

Make Your Mark

Entering the second floor, Make Your Mark celebrates New Orleans’ rich art and its architectural, musical, historical and cultural heritage. When children understand and embrace their heritage it invites children to discover how to make their mark with their own original creations.  This is exhibit includes Studio in the Park, Jammin’ House, Jackson Square, NOLA Urban Design Studio, Build Big Dreams, Book Nook & Light Tables and more!

Move With the River

Move with the River will immerse children in an action-packed wet world of fun where they will begin to explore the story of the Mighty Mississippi River. Families will follow the journey of Louisiana’s most abundant resource, water! 

Acorn Café 

We’re not done yet, a huge BONUS to your visit to the Louisiana Children’s Museum is the family-friendly Acorn Café! Acorn a Dickie Brennan & Co. Cafe at the new Louisiana Children’s Museum in City Park is the icing on a day of fun exploration. Guests can enjoy a meal indoors or outdoors on the LCM balcony overlooking the lagoon, oaks, and wildlife. The menu is sourced around high quality, local food at an affordable price. The majority of children menu items are $6, and adult entrees range from $6 to $11. Have a little one with a food allergy? No worries! Acorn will be peanut-free and will offer many gluten-free options, including a gluten-free dough for pizzas. Come early or stay late, Acorn will open daily from 7 a.m. to 5 p.m. with French Truck coffee and pastries served for a morning starter or an afternoon pick me up.
